160g Springbok Carpaccio
Extra virgin olive oil
50 g rocket
50 g shaved Parmesan
Distribute slices across the plates in overlapping layers. Allow to reach room temperature, if necessary. Drizzle with olive oil and sprinkle with rocket, shaved Parmesan and pine nuts and capers (optional).
Season to taste with salt and pepper.
